Banana CakeSome things were just meant to be served with cappuccino and this banana cake, sometimes called banana bread, is one of those things.Ingredients:10 oz banana puree 12 oz caster sugar 12 oz soft flour 6 oz soft butter 1 rounded tspn baking powder 2 rounded tspn bicarbonate of soda 6 fl oz eggs 4 fl oz water Method: 1. Place the butter and sugar in a mixing bowl and whisk until light in color and texture 2. Mix the eggs and water with the banana puree. 3. Sift the flour with the soda and baking powder. 4. Gradually whisk steps 2 and 3 into 1. Adding a bit of each at a time should prevent the mix from curdling. 5. This cake mix will seem incredibly thin but don't worry, it is supposed to be. Pour the mixture into a baking tray or cake tins lined with baking parchment and bake at 140°c for 1 hour. Turn onto a cooling rack and cool. Like i said earlier this cake is ideal served with cappuccino but served warm with a bit of hot butterscotch and a scoop of ice cream it will hold its own against any dessert.
