Biscotti

Meaning twice-cooked, Biscotti is kind of like a cake that is turned into a biscuit and is ideal for serving with desserts, ice cream or just coffee. The bonus is - you can make the dough in advance and freeze it raw, then bake it from frozen, slice it and rebake it when unexpected dinner guests arrive.

Pre-heat your oven to 160°C.

Ingredients:

9oz of plain flour
9oz of caster sugar
2 tspn baking powder
3 large eggs
3oz of sultanas
2oz of dried apricots - sliced
2oz pistachios
2oz almonds
2oz hazelnuts
zest of 1 orange
zest of 1 lemon

Method:

1. Place all of the ingredients in a bowl and mix until combined into a very thic and sticky dough

2. Place on a baking tray and cook for 40 minutes then cool. You can freeze this dough raw and cook it from frozen at a later date.

3. Turn the oven down to 100°C.

4. Slice the biscotti as thinly as possible and lay out on a flat baking tray which has been lined with baking parchment.

5. Place in the oven for an hour or so until crisp.
