Chocolate Sauce

The all purpose dessert sauce. Spoon it over steamed puddings, poached pears or vanilla ice-cream, or just dip your cookies in it.

Ingredients:

1 pint of water
10 oz sugar
¼ pint liquid glucose
4 oz cocoa powder
10 oz dark chocolate chips (50% cocoa minimum)

Method:

1. Bring the water to the boil with the cocoa, glucose and sugar and simmer for five minutes. This will get rid of the cocoa's powdery after-taste but it is prone to burning so needs to be stirred constantly.

2. Take off the heat, stand for a minute of two then add the chocolate and stir until smooth.
