Elderflower Cream

This flavoured cream has so many uses: a topping for trifle, an ideal accompaniment to Summer Pudding or 50% of a Rhubarb Fool. This recipe uses "Green Label" Elderflower cordial but there's a recipe here if you fancy a crack at making your own.

Ingredients:

1 pint Double cream
4 fl oz Elderflower Cordial
Seeds of 1 Vanilla pod
2 oz caster sugar

Method:

Easy peasy. Place everthing in a well-chilled mixing bowl (preferable attached to an electric mixer!) and whisk until it starts to hold soft peaks.
