SCOTCH PANCAKES

In England these are known as Scotch pancakes, in Scotland drop scones and in America just pancakes. They're delicious wherever you eat them.

Ingredients:

3 eggs
350g of self raising flour
225 ml full-fat milk
85g of caster sugar
1 tspn vanilla extract
1 pinch of salt

Method:

1. Whisk everything together to form a smooth, thick batter.

3. Pre-heat a non-stick frying pan over a medium heat and brush the base lightly with butter. Splodge well-spaced spoonfulls of batter into the pan and cook for 1-1½ minutes on each side or until golden.
