White Chocolate Parfait

The white-chocolatiest white chocolate parfait ever. And probably the easiest too - it only has four ingredients!

Ingredients:

450 g white chocolate
3 eggs
600 ml double cream
25 ml Kirsch

Method:

1. Melt the white chocolate

2. Whisk the eggs until quadrupled in volume and bubbly.

3. Whisk the cream until it holds soft peaks

4. Quickly fold the cream and half of the egg into the chocolate. Fold in the remaining egg and Kirsh, pour into terrines or moulds, or even cups, and freeze overnight.

I often add a couple of handfulls of coarse nougatine to the mix right at the end for a bit of crunch.
