Crispy Ocean Perch with Spices

Ocean Perch, also known as Rubyfish or Redfish is hard to miss ... it looks like a giant goggle-eyed goldfish! Flavour-wise it is mild-bordering-bland but on the plus side it's as cheap as chips and an ideal candidate for "spice and fry".

Ingredients:

8 x 4oz Ocean Perch Fillets (2 per person)
2 teaspoons of paprika
2 teaspoons of salt
1 teaspoon of cumin
1 teaspoon of fresh ground black pepper
1 teaspoon of cayenne
1 tblspn of plain flour
2 eggs - beaten
2 handfulls of Panko breadcrumbs

Method:

1. Mix the spices, salt and flour and dredge the Perch fillets on both sides. Hold each fillet in the palm of one hand then gently "clap" your other hand against it to remove any excess. Dip in the beaten egg and then the breadcrumbs.

2. Heat your deep fryer to 185°c and fry the fillets for four minutes. Drain on kitchen paper.

Serve with chips (fries) and Roasted Garlic Mayonnaise.
