Herring in oatmealOne of the simplest Herring recipes is also the easiest and possibly the best: Herring fillets dusted with oatmeal and shallow fried.Ingredients:2 large Herring 3 tblspn plain flour 1 egg - beaten 3oz pinhead oatmeal salt and black pepper 1 oz lard Method: 1. Ask your fishmonger to scale, fillet and pinbone the Herring. 2. Place the flour, beaten egg and oatmeal onto three seperate plates. Dredge the fillets in the plain flour and pat to remove any excess then dip the non-skin side in the beaten egg and press into the oatmeal. 3. Heat the lard in a non-stick frying pan over a high heat and cook the Herring - oatmeal side down, for 2 minutes. Turn them over and cook for a further two minutes. Recipes for avoiding disaster
