SALT COD

One of the easiest recipes ever. Salting cod has been common practice for any chef worth his, erm, salt, for ever. It removes excess water and firms the flesh up a treat and, of course, less water means more flavour. You can buy cod which has already been salted but you need chisel-teeth to eat it!

1. There's no recipe as such, simply place a 1cm layer of sea salt in a plastic container. Place your cod portions, fillets, steaks or whatever on top and cover completely with more salt and leave overnight. Remove the cod, rinse well, cover with fresh water and soak for 1 hour.

2. To cook, bring a pot of cold water to the boil. Add the cod, bring back to the boil then turn off the heat and leave until cool.
