Devils on HorsebackAccording to the "oldies" you couldn't go to a dinner party in the seventies without being bombarded with Devils on Horseback. But what are they? Well, the "angels" are prunes wrapped in bacon and grilled, and the "horseback" is the little squares of toast that they are served on. They are suprisingly pleasant.Ingredients:Agen Prunes - any stones removed Wafer-thin slices of smoked pancetta Slices of white bread olive oil butter salt and pepper Method: 1. Lay out the strips of pancetta. Place a prune on one end, sprinkle with salt and pepper then roll up and secure with a cocktail stick. 2. Heat a little olive oil in a non-stick frying pan over a medium heat and add the "devils". Cook for a minute or so until golden then flip over and repeat. 3. Remove the crusts from the bread and cut into eight squares. Brush with butter, sprinkle with salt and pepper and grill until golden on both sides. Place a devil on top of each square and serve.
