Hot Water PastryHot water pastry is traditionally used for "raised" Pork Pies but, by replacing the lard with butter, you have a vegetarian version which is ideal for things like baked apple dumplings. The dough is suprisingly simple to make but must be used while warm.Ingredients:450g plain flour 175g lard 200ml cold water a pinch of salt Method: 1. Place the flour in a mixing bowl with a pinch of salt. 2. Bring the water and lard to the boil. 3. Pour the hot liquid onto the flour and mix to a smooth dough. Use immediately.
