SuccotashSuccotash originated as "msíckquatash" in the extinct Algonquian language formerly spoken in parts of New England and Long Island, and basically translates as "baked corn kernals." There is nothing easier and it eats equally well with meat or fish or just by itself with some dunking bread.Ingredients:2 tblspns olive oil 4 oz pancetta - diced 4 oz chorizo - peeled and diced 1 large onion - peeled and diced 3 cloves of garlic 8 oz butterbeans - soaked overnight Enough chicken stock to cover the beans 2 corn cobs - stripped 1 tblspn chopped chives a knob of butter Method: 1. Heat the oil in a large pan and cook the pancetta and onions until golden. Add the chorizo and cook for a minute or two. 2. Add the beans and stock. Bring to the boil, cover and simmer gently for 25 minutes. 3. Add the corn and simmer for three minutes, stir in the parsley and butter and serve. Recipes for avoiding disaster
