Cheese and Herb Cakes

The beauty of these cheese and herb cakes is that you can prepare the mixture way in advance and cook them as you need them. Not that the prep is exactly difficult. You could actually call them "gallettes" - like the French do - if you want to make them sound posh and difficult to do!

Ingredients:

4 oz plain flour
4 oz cream cheese
2 eggs
8 oz grated cheddar
8 oz grated gruyere
4 oz crumbly goats cheese
1 tspn chopped parsley
1 tspn chopped chives
salt and pepper

Method:

1. Whisk the flour, cream cheese and eggs until just smooth. Stir in the other ingredients and chill for at least two hours.

2. Take desertspoon-fulls of the mix and drop into seasoned plain flour. Roll into balls then flatten slightly.

3. Place a frying pan over a medium heat. Add a drizzle of oil and a knob of butter and heat until sizzling. Add the cakes but be sure to leave space between as they will spread a little, then cook for a couple of minutes on each side until golden.
