Herb SaltHerb salt can be used to season pastas, pizzas, stews, to cure duck legs, hams or salmon. In fact, it can be used for anything you would normally use salt for and it will bring its own background flavours.Ingredients:1lb of sea salt 1 tblspn of thyme leaves ½ tblspn of rosemary leaves ½ tblspn of dill leaves 12 large basil leaves 4 wild garlic leaves Method: Roughly chop the herbs, place in a food processor with the salt and blitz for 5 minutes. Turn the salt out onto a tray and place in the oven at its lowest possible setting overnight. Blitz again and store in an airtight jar.
