Mango Salsa

This salsa is great with anything that would benefit from a quick burst of fruity. Try serving it with some smoked chicken and creme fraiche as a light lunch or supper, or add it to a rocket salad to serve with crispy goats cheese spring rolls.

Ingredients:

1 mango – peeled and cut into ½ cm dice
2 red chillies – finely chopped
2 sticks of lemon grass – finely chopped
Zest and juice of 1 lime
1 thumb of root ginger – peeled and finely chopped
6 fl oz olive oil
1 tblspn finely chopped coriander
salt and pepper
