Mashed PotatoesThe classic partner for sausages but ideal with so many other things. Try flavouring your mash with grain mustard to serve with pork, smoked garlic for chicken, a little horseradish and caramelized onion for oxtail. The combinations are endless.Ingredients:1 kg Maris Piper potatoes 4oz unsalted butter 2 fl oz hot milk salt and pepper Method: 1. Peel the potatoes, cut into even-sized pieces and place in a pan of cold water with a handful of table salt. Bring to the boil and simmer until tender. 2. Drain the potatoes and return to the pan. Place over a low heat for a couple of minutes to dry a little. 3. Add the butter and mash the potatoes. Stir in the hot milk and season. Always mash the potatoes while they are hot and always use a "floury" potato otherwise they can go a bit "gloopy". Recipes for avoiding disaster
