Oriental ColeslawBit of a misnomer, this one. It's nothing like shop-bought coleslaw and isn't exactly oriental. It's more like a hot and sweet pickled vegetable salad but that doesn't quite have the same ring to it.Ingredients:For the salad: 1 pak-choi - very finely shredded 1 large carrot - peeled and cut into fine matchsticks 6 spring onions - very finely sliced ½ cucumber - peeled, deseeded and cut into fine matchsticks 2 tspn toasted sesame seeds a handful of beansprouts For the dressing: 1 tblspn sweet sherry 1 tblspn soy sauce 1 small red chilli - seeds removed and very finely sliced 1 tblspn runny honey 1 tspn pickled ginger - finely chopped Method: Simply whisk the dressing ingredients together, add the other ingredients and gently mix.
